PURPOSE: To obtain thickened polysaccharides having high dispersibility in water by coating the particles of polysaccharides which do not contain anionic groups with hydrolyzed gelatin as thickening and viscosity-raising polysaccharides. CONSTITUTION: The polysaccharides which are natural or amidated pectin, such as xanthan and galactomannan, and do not substantially contain the anionic groups are used. The polysaccharides described above are coated with 0.5 to 5.0 wt.% hydrolyzed gelatin of a mol.wt. of 1000 to 50000 dalton. The polysaccharide particles are then granulated in the presence of a hydrolyzed gelatin soln., by which the thickening and viscosity-raising polysaccharides are obtd. The resulted thickener have the high dispersibility in the water and are used for production of instant products in food and medicaments or the like. |
