In a gutting machine, especially for trout and salmon, where the fish are fed through the machine in swimming position, and where the machine comprises tools for slitting the abdomen, removing the guts, and cutting the peritoneum, which protects the blood edge, the object was to effect removal of the blood edge largely in one cohesive piece without damaging the fish. This is achieved by means of one or more fixed, loop or scoop- shaped scraper or cutting elements 7, 8 sprung in the longitudinal direction of the machine (fish conveying direction). <IMAGE>
