PURPOSE:To efficiently subject oil, and fat to a ester interchanging reaction at a relatively high temperature, by subjecting a fatty acid or derivative thereof to previous adsorption treatment on an insoluble carrier, adsorbing and immobilizing a lipase on the carrier in an aqueous medium and using the resultant immobilized enzyme having high durability and activity. CONSTITUTION:A fatty acid (e.g., oleic acid) or derivative thereof is subjected to previous adsorption treatment on an insoluble carrier, such as macroporous weak anion exchange resin, and a lipase of the genus Rhizopus is then brought into contact therewith in an aqueous medium, adsorbed and immobilized on the insoluble carrier. The resultant immobilized lipase is subsequently filled in a column dried to <=2% moisture content and continuously brought into contact with a mixture of fats and oils (e.g., palm oil) with a fatty acid (e.g., stearic acid) in the absence of a solvent to carry out ester interchange reaction and modify the fats and oils. |
