PURPOSE:To obtain agar-agar soluble at lower temperatures, suitable in such fields as foods, drugs and biotechnology, by cooling an agar-agar solution of specified temperature to another specified temperature to effect freezing and then thawing followed by dehydration. CONSTITUTION:A commercial agar-agar is dispersed in water followed by warming to prepare an agar-agar solution of a temperature high than the coagulating point of said agar-agar by >=15 deg.C (pref. by >=20 deg.C). Thence, this solution is cooled to a temperature of <=0 deg.C within 5(pref. 2)min to effect freezing. The resultant frozen solution is left to stand at 5-50 deg.C for 0.5-24hr to effect thawing followed by dehydration and drying, thus obtaining the objective agar-agar. Said thawing is preferably performed by dipping the frozen solution in water at 5-50 deg.C for 0.5-24hr. |
