PURPOSE:To permeate and heat unrefined soy or SAKE(Japanese rice wine) even to the depth thereof, contrive promotion of activity of a fermentative microorganism, shorten an aging period and rapidly brew unrefined soy, by irradiating the unrefined soy or SAKE contained in a fermentation vessel having a lid with far infrared rays while stirring. CONSTITUTION:Unrefined soy or SAKE 2 is contained in a fermentation vessel 1 having a lid of the title apparatus which is hermetically sealable with the lid 3. A penetrable wall 4 for penetrating far infrared rays without a loss is provided on part of the side of the vessel 1 and a radiating means 7 constituted of a far infrared ray radiator 5 and a heater element 6 on the outside thereof is covered with a heat insulating material 8 and then enclosed with a shell. The whole is constituted so as to enable control of radiating electromagnetic waves by a regulator 11 for far infrared ray radiation provided through a receptacle 10 and a lead wire 12. The vessel 1, containing the unrefined soy or SAKE 2 and hermetically sealed with the lid 3 is then irradiated with electromagnetic waves of prescribed far infrared rays through the penetrable wall 4 from a far infrared ray radiator 5 through the regulator 11 under the set desired fermentation conditions of the unrefined soy or SAKE. The unrefined soy or SAKE penetrated with the far infrared rays and heated even to the depth while being convected and stirred to carry out fermentation with reduced time. |
