The knife with alternating movement comprises a casing 1 containing electrically powered means of moving 9 which drive alternately moving equipment 6 carrying the blade 7 which projects out of the casing 1 under the action of a return spring 8. The means of moving 9 consist of a rotary electric motor 9 which drives a percussion cam 11 with which the moving equipment 6 comes into contact when the blade 7 is in a withdrawn position B and means 34, 35, 36 mechanically connected to the moving equipment 6 cause the motor 9 to start when the blade 7 is pushed before the said equipment is subjected to the action of the percussion cam 11.
