PURPOSE:To provide safflower sprout for food having suppressed bitter taste, at a low cost, by sowing safflower seeds on a water-retaining mat, sprouting and growing the seed in a dark room without applying fertilizer to obtain a vegetable sprout, tinting the sprout in pale green color by the irradiation with a greening fluorescent lamp for a prescribed period, harvesting the sprout and removing seed coat therefrom. CONSTITUTION:Seeds of safflower are sowed on a water-retaining mat 52 and introduced into a dark culture chamber 3 in a culture chamber 1. A door 11 is closed and the seeds are subjected to sprouting and growth to obtain vegetable sprout of about 10cm in height under the supply of water with a water-spraying apparatus 7 and the control of temperature with a hot air heater 9 without applying fertilizer. The sprout is transferred from the dark culture chamber 3 to a culture chamber 2 furnished with a fluorescent lamp 8 for greening and irradiating with the fluorescent lamp 8 for a prescribed period until the whole sprout is slightly tinted with green color. The obtained sprout composed of a relatively soft hypocotyl and cotyledon and having decreased bitter taste is harvested and the seed coat is removed to obtain the objective sprout safflower for food. |
