PURPOSE:To obtain the title food of good flavor with simple work due to gradual coagulation of soybean milk, by using, as the soybean milk-coagulating liquor, a suspension composed of magnesium chloride, polyphosphate, seaweed component and water. CONSTITUTION:As the coagulating liquor, a suspension composed of magnesium chloride, polyphosphate, seaweed component and water is added to soybean milk followed by mixing the system. Thence, the resultant intermediate product is packed into a packaging container followed by heating to effect coagulation, thus obtaining the objective food. |
