PURPOSE: To obtain marinated protein food by applying a mixture composed of inorg. nontoxic phosphate, nontoxic edible salts exclusive of this phosphate, water and reactive flavors onto protein internal food cores having outside surfaces. CONSTITUTION: The mixture is prepd. by mixing the inorg. nontoxic phosphate, the nontoxic edible salts exclusive of the phosphate, the water and the reactive flavors. This mixture is applied on the surfaces of the protein internal food cores having the first outside surfaces and is then brought into tight contact therewith for the time sufficient for permanently absorbing or for absorbing the flavor compsn. and/or flavor precursors from the mixture. Next, the finished and coated protein internal cores are subjected to conditioning by heating as desired, by which the marinated protein food is produced. |
