The invention relates to a continuous flotation process and an appliance for separating particles from fermentable or fermented suspensions in the production of beverages or other biotechnological suspensions. The process proposed, and the appliance to carry it out, ensure, inter alia, that the setting of the particle content desired of the suspension, specifically of a desired cooler sludge content of the beer wort, can be controlled. In terms of the process this is achieved, inter alia, by means of a volume flow Q being divided into two volume flows Q1 and Q2, a volume flow DELTA Q1 enriched with particles being separated, in the form of foam, from the volume flow Q1, a volume flow reduced by the volume flow DELTA Q1 being combined with the volume flow Q2, and the volume flow ratio Q1/Q2 being controllable as a function of the particle content desired (Figure). <IMAGE> |
