PURPOSE:To obtain in a short time the above fries free from deformation due to shrinkage, excellent in eating feel, capable of distribution at normal temperature, with specified moisture content, by deep-frying square pillar-shaped potato sticks followed by deep-frying again while irradiating micro-waves. CONSTITUTION:First, raw potatoes are cut into square pillar-shaped sticks with a cross section or 3-30mmX3-30mm, being subjected to branching followed by deep-frying in an edible oil at 105-230 deg.C for 11sec-0.25min and then freezing into a frozen product. This product is then deep-fried again at 100-230 deg.C for 15sec-2min which irradiating microwaves, thus obtaining the objective fried sticks with a moisture content of 0.1-10wt.%. |
