PURPOSE:To provide fruits of little sour taste with sour taste, which highly sour fruits with sweet taste, by putting fruits in a closed vessel followed by filling said vessel with pressurized carbon dioxide to press said carbon dioxide into the fruits to effect dissolution. CONSTITUTION:Fruits such as (mandarin) oranges are directly put into a closed vessel 1 which is then capped with the lid 2. Thence, this vessel 1 is filled with pressurized carbon dioxide fed from a cylinder 4. In this process, it is preferable that the air in the vessel 1 be expelled via an exhaust valve 6 followed by filling the carbon dioxide from the cylinder 4. |
