The process comprises triple cultivation in culture contg. liver and yeast extracts, tryptone, potassium phosphate and dextrose. A second similar medium contg. sugar and agar-agar and a third contg. meat extract, complete the 25 deg.C 24-48 hr. cycle. Washing with peptone-contg. glucosate and 1:1 mixing with collagen hydrolysate, is followed by congealing at -45 deg.C for 4 hrs. prior to final bottling in inert gas.
