PURPOSE:To obtain the above fat and oil composition having stable emulsion at high temperature, excellent taste and texture, consisting of an oil phase containing a specific amount of a glycerin di-fatty acid ester and a water phase containing a specific amount of an electrolyte. CONSTITUTION:The aimed fat and oil composition consisting of (A) an oil phase containing >=20wt.% based on total oil phase amount of a glycerin di-fatty acid ester having <=30 deg.C rising melting point and, if necessary, lecithin (derivative), emulsifying agent, spice, dyestuff and flavor and (B) a water phase containing >=2wt.% based on the total composition amount of an electrolyte such as adipic acid, citric acid or glucono delta lactone. The weight ratio of the oil phase/water phase is preferably 75/25-5/95. |
