PURPOSE:To obtain the title light-colored and transparent essence having excellent flavoring properties by a reduced number of processes and at low treating cost, by subjecting soup of animal to ultrafiltration, concentrating under reduced pressure and treating a specific reverse osmosis membrane. CONSTITUTION:Soup of animal or fish and shellfish is subjected to ultrafiltration, the filtrate is concentrated under reduced pressure, treated by a reverse osmosis membrane having 20-60% removal ratio of NaCl and a valuable component is recovered in the filtrate side to give the aimed essence. The soup preferably undergoes at a high temperature of >=60 deg.C. Further a PVA-based complex film, for example, is used as the reverse osmosis membrane. |
