PURPOSE: To provide the senbei (nonglutinous rice crackers) and snacks which are formed by using antioxidants, are stable over a long period of time, are fresh in the scent possessed by crustacea, are free from offsensive smell and well maintain color tones. CONSTITUTION: These senbei and snacks are formed by incorporating the antioxidants (e.g.; tocophenol, spice extracts, licorice extracts, BHT, BHA; erythorbic acid, etc.) preferably at 0.005 to 0.5wt.% therein. |
