FIELD: food, butter and fat industry. SUBSTANCE: butter and fat product is vegetable phospholipids obtained by 4-fold mixing preliminary heated food vegetable phospholipids with an organic solvent. Method involves addition of mixture of citric and succinic acids solution in hydrated acetone (5-10% of phospholipids mass) taken at amount 1-2.5% to phospholipids mass to solvent before third mixing. Ratio of acids in mixture = (1:0):(3:1). Then method involves separation of phases for neutral lipids solution in solvent and phospholipids. This provides positive effect on structure-functional properties of cellular membranes. Invention can be used for production of foodstuffs of the special purpose.
