PURPOSE:To obtain a garlic extract giving no foul breath after eating, by treating chopped or grated garlic with an enzyme, mixing with edible oil and fat, separating and purifying the product and packaging the obtained oily phase or a mixture of the oily phase and an aqueous phase. CONSTITUTION:Chopped or grated garlic is preferably added with water or a buffer solution and is reacted with an enzyme. The reaction product is added and mixed with edible fat and oil, subjected to pressing or centrifugal separation, etc., and purified. The obtained oily phase or a mixture of the oily phase and an aqueous phase is packaged to obtain the objective garlic extract. |
