An automatic baking device for automatic baking of bread from bread starting materials with the aid at least of proving and baking processes includes a gas density detector (23) for measuring the density of gases which are generated by the bread starting materials and a controller (25) for controlling the proving and baking processes in accordance with the changes in the gas density which was measured during the processes by the gas density detector. In the proving and baking processes, there is a correlation between the density of the gases which are generated by the bread starting materials and the conditions of the individual baking processes. Therefore, the automatic baking device according to the invention controls the individual baking operations, depending on the results obtained of the gas density changes. <IMAGE>
