PURPOSE: To improve gelatinization of grain particles and to finish them into puffy cooked rice by feeding high temp. steam to grain immersed in advance and feeding high temp. steam again after immersion. CONSTITUTION: In the primary steaming device A, high temp. steam is fed to grain immersed in advance and in an immersion device B, the grain transferred from the device A is immersed in high temp. water. Then, in the secondary steaming device C, high temp. steam is fed to the grain transferred from the device B. In addition, in the immersion device B, an immersion tank 15 and a plurality of raw material pushing plates 22 the outer end parts of which are close to the inner wall face of the immersion tank 15 and which carry the grain to the device C are provided. As the result, it is possible to improve gelatinization of grain particles and to finish them into puffy cooked rice. |
