摘要 |
A method for prepare an instant powdered soy milk is presented. Thus, 0.5-1 kg soybean protein was hydrolyzed with 2-5g protein hydrolyzing enzyme for 5-20 min. The soln. was homogenized and spraydried, 0.5kg of which was mixed with 1kg starch syrup and soybean oil, coated with a soln. contg. 1-5g soybean phospholipid in 10-30g fatty acid-triglyceride, and dried at 60≦̸C for 5 min to give powdered soy milk. |
