A process for preparing compsns. which can be used for modifying the organoleptic properties of consumer articles is claimed, where the compsns. contain (a) an unsatd. carboxylic acid or ester thereof, (b) an aroma additive which is different in chemical structure from (a) and is organoleptically compatible and non-reactive with (a), and (c) a montoxic, nonirritant carrier which is different in chemical structure from (a) and is organoleptically compatible and non-reactive with (a). The process is characterised in that (a) is 2-methyl-cis-3-pentenoic acid (I) or a 2-6C alkyl ester of (I). Also claimed is a process for preparing (I) as described in the description of the specification and/or illustrated by the examples. The compsns. can be used in foodstuffs, chewing gum, medicinal prods., flavours and fragrances, perfume compsns., perfumed prods., tobacco compsns. and tobacco-flavouring compsns. They generally impart fruity flavour and aroma notes. |
