PURPOSE:To obtain a yeast cell containing beta-galactosidase having high activity, by culturing a yeast belonging to genus Lipomyces in a weakly acidic or weakly alkaline state and continuing the culture in a medium adjusted to acidic state. CONSTITUTION:The objective yeast cell having improved synthesizing performance of galacto-oligosaccharides is produced by culturing a yeast belonging to genus Lipomyces in a medium adjusted to weakly acidic or weakly alkaline state, i.e. pH4.5-8 and, in the logarithmic growth phase, lowering the pH to <=3.0 and continuing the culture in an acidic state. |
