<p>PURPOSE:To prepare a MATSUTAKE (Armillaria matsudake) liquor having elegant fragrance and beautiful pale yellow color, preventing the degradation of MATSUTAKE and the separation of a cap from a stem, by thawing a frozen and sterilized MATSUTAKE and throwing the MATSUTAKE into refined Japanese rice wine. CONSTITUTION:Raw MATSUTAKE sealed in a vinyl bag, etc., is frozen by cooling at <=-10 deg.C and sterilized by keeping in cooled state for >=10 days to terminate the activity of the fungus of MATSUTAKE. The frozen MATSUTAKE is slowly thawed and returned to normal temperature. The MATSUTAKE is quickly thrown into refined Japanese rice wine preventing the contamination with sundry germs and sealed to extract the MATSUTAKE essence into the wine.</p> |
