Process characterised in that an olive oil, for example an olive oil as defined in the European Pharmacopoeia, is purified in the following manner - the initial oil is neutralised with a saturated aqueous solution of alkali metal carbonate, the solution being in a quantity equivalent to two to ten times the weight of oleic acid calculated after determination and then, after settling and separation of the aqueous phase, the oil is washed to complete neutrality and then the oil is decolorised after having been dried with the aid of decolorising earth, under an inert atmosphere. |
