The roller has a drum fixed on a rotation axis, and a driving device (12) driving a rotation of the roller, where a surface of the drum is made of polytetrafluoroethylene material. The drum is provided with a gripping device (4) arranged at a periphery of the roller with which a product layer (24) of a sliced product (2) is sampled. The gripping device is arranged at an angle along the rotation axis for progressively sampling the layer of the product. The surface of the drum comprises oil for reducing friction between the gripping device and the layer of the product. An independent claim is also included for a method for sampling a layer of a transported product.
