PURPOSE:To produce an acidic urease having high enzymatic titer and useful e.g. as an agent for improving the quality of liquor, etc. by culturing a microbial strain capable of producing acidic urease in a medium containing manganese and nickel. CONSTITUTION:A microbial strain belonging to genus Lactobacillus, genus Streptococcus, etc., and capable of producing an acidic urease having optimum pH range of the activity of about 2-5.5, e.g. Lactobacillus fermentum JCM5867 (FERM P-8990) is cultured in a medium containing usually about 0.0001-0.15wt.% of manganese (in terms of Mn) and about 0.00004-0.015wt.% of nickel (in terms of Ni) at about 20-50 deg.C for about 5-120hr. The objective acidic urease is separated mainly from the cultured bacterial cell. |
