Method and apparatus for carving up a slaughtered poultry carcass, by means of which the carcass is suspended by the legs in a conveyor system, being conveyed breast forward in the conveying direction and during conveying cut through by means of a cutting process, the carcass before and during the cutting process being brought into an inclined position in relation to the conveying direction, so that the legs are placed in front of the rest of the carcass, whilst an edge section of the rear opening between the legs, which forms the limit of the breast, is brought down between the legs, and the cutting process is performed in a transverse direction in a plane that extends between the lowered edge section and the thighs, so that the carcass is carved up into a rear half comprising the legs, thigh parts belonging to the legs and a back part; and a front half comprising a breast piece and a main part of the carcass back pieces, the front half being supported in the area in which the cutting process is performed and carried along a certain path to a subsequent processing station for the front half. <IMAGE>
