摘要 FIELD: food industry.SUBSTANCE: invention relates to production of food additive from sprouted beans. Method involves milling sprouted beans of “Pobeditel” grade, sieving through sieve with holes diameter of 1 micron, purification from ballast substances with “Amilosubtilin G 10” in dosage of 2.5 units per 1 g of starch in ratio of flour:water 1:4 at temperature of 40 °C. Then one performs centrifugation for 10-20 min at 2,000-3,000 s, depositing protein of 40 % acetic acid at pH of 4.3 and secondary centrifugation for 10-12 minutes at 2,000-3,000 sto produce protein paste. Then protein is washed with water with pH of 6.0-7.0, final centrifuging for 10-12 minutes at 2,000-3,000 sand protein drying.EFFECT: invention allows to manufacture ready product with increased biological value, which can be used in production of functional flour, meat and dairy products.1 cl, 1 dwg, 2 tbl
