PURPOSE:To enable continuous recovery of the oil product from the top and the water-soluble substrate from the bottom in high efficiency by bringing the oil substrate into contact with the water-soluble substrate countercurrently using a lipase-immobilized reaction tank which is composed of the top and the bottom of settling tanks and the middle zone in which the settling tanks and agitating tanks are arranged alternatively. CONSTITUTION:The aqueous substrate and the oily substrate are fed from inlets 3 and 7, respectively, into the lipase-immobilized reaction tank which is composed of the top and bottom ends of agitation tanks 2, 8, and the middle zone where agitation tanks 6 equipped with stirring blades 4 and settling tanks 5 are arranged alternatively, so that these substrate are allowed to contact with the immobilized lipase countercurrently. Then, the oily product is recovered from the top outlet 1 and the aqueous product, from the bottom outlet 9 whereby fat and oil are hydrolyzed with the immobilized lipase.
