PURPOSE:To provide a compound seasoning composition having delicate, rich and deep taste and suitable as a general-purpose seasoning, by compounding Na, K and Ca salts of glutamic acid, an organic salt, and an inorganic salt, etc. at specific ratios. CONSTITUTION:The objective compound seasoning composition is prepared by compounding sodium salt, potassium salt and calcium salt of glutamic acid, and if necessary, an organic or inorganic salt such as sodium citrate, sodium malate, potassium phosphate, calcium chloride, etc. at specific ratios. The gram-equivalent ratio of Na:K is (0-3):1 and that of Ca:K is (0-1.5):1. The ratio of the molar number of glutamic acid to the sum of the gram-equivalent numbers of K, Na and Ca is (0.1-1.2) to 1. |
