PURPOSE:To selectively and efficiently hydrogenate a free unsaturated fatty acid, by selectively saturating the free unsaturated fatty acid coexisting with a glyceride using a rumen bacterium and/or an extract thereof. CONSTITUTION:A rumen bacterium or an extract thereof obtained by cultivating the rumen bacterium, pulverizing the cultivated bacterium, separating a liquid from solid and freeze-drying the liquid phase thereof or both are entrapped and immobilized in a natural or synthetic high polymer to form immobilized bacterial cells, which are then introduced into a reaction system of a free unsaturated fatty acid coexisting with a glyceride dissolved in an organic solvent system to carry out hydrogenation at 20-60 deg.C, preferably 30-40 deg.C for 2 hr-2 days, preferably 18-30 hr in an anaerobic atmosphere. Thereby the free unsaturated fatty acid is selectively saturated. The free unsaturated fatty acid may be either natural products or synthetic substances and 8-22C straight-chain unsaturated fatty acids are preferred. |
