PURPOSE:To obtain a food enriched stably in large quantities by edible fat and oil without feeling offensive odor of the edible fat and oil in eating and impairing taste, by binding the edible fat and oil with an albumin, powdering the fat and oil complex and adding the powdered complex to the food. CONSTITUTION:An albumin such as egg white albumin or serum albumin is dissolved in an aqueous solution and an edible oil which is liquid at ordinary temperature or on heating, e.g. an edible fat and oil solution of lamprey oil or oil-soluble medicine is added to the above-mentioned albumin solution and the mixture is stirred to provide a oil complex exhibiting powdery form at ordinary temperature or on heating. Then proper amount of the oil complex is previously dispersed into a food to be cooked such as snack cake, bread or noodle. |
