In a process for decanting raw juices, the solid matter content in the circuit (2, 3, 4) for residues of dialysis in an ultrafiltration or microfiltration device (1) quickly increases when the device is started. As the solid matter content increases, the filtration output at first abruptly diminishes, then increase up to a value that is higher than the initial value. When the highest possible filtration output value is reached, the solid matter content, as well as the filtration output, are kept constant by regulating the outflow of the residues of dialysis or the inflow of fresh juice. The filtration output can thus be considerably improved. |
