摘要 NEW MATERIAL:An enzyme belonging to the genus Bullera. Action; hydrolyzing L-glutamine to form L-Glu and ammonia. Substrate specificity; 8.1-10<-4>MKm value for L-glutamine at 30 deg.C and pH 7.5 (phosphoric acid buffer solution). Optimum pH; 5-9. Stable pH; 5-8. Molecular weight; 150,000 (measured by a gel filtration method), etc. USE:For producing foods containing common salt in a high concentration. PREPARATION:A microorganism (e.g. Bullera.oryzae JCM 5281) is initially cultivated preferably by a method for liquid aerobic cultivation. A substance containing a cell wall-lytic enzyme is then added to the above-mentioned culture fluid or cultivated microbial cells to solubilize the aimed enzyme, which is subsequently isolated.
