PURPOSE:To reduce stringiness and to improve handleability to measure and take out a fixed amount of pasty seasoning, by adding =0.05-<0.5wt.% macerated substance of cellulose produced by a bacterium based on cellulose content in the macerated substance to a pasty seasoning. CONSTITUTION:A bacterium such as Acetobacter acetic subsp. xylinum ATCC10245 is cultivated in an ordinary nutritive medium. Cellulose produced by the bacterium is washed in running water for 1-6 days to remove impurities. Then the prepared cellulose is dispersed into water, macerated by a pulp macerating machine and homogenized by a high-pressure homogenizer. Then the prepared suspension is centrifuged to give a pasty cellulose macerated substance. Then a tasty seasoning is incorporated with =0.05-<0.5wt.% based on cellulose content in the macerated substance of the macerated substance of cellulose. Consequently, stringiness is improved and handleability to measure and take out a fixed amount of the pasty seasoning is facilitated and is accurately carried out. |
