PURPOSE:To obtain the titled KAKUNI (food material cut into square and boiled) improved in flavor, taste, etc., of fish meat, by kneading raw meat and denaturated meat of fish with a seasoning, forming the kneaded product into a lump, subjecting the lump to steam boiling, baking and drying and cooling and then cutting into a prescribed shape and further roasting the treated meat. CONSTITUTION:Raw meat of fish such as young yellowtail or skipjack is kneaded with denaturated meat obtained by boiling a fish meat with an iron pot and a seasoning obtained by blending maltose with white superior soft sugar, sorbitol, soy sauce, common salt, etc., using a blender, etc., and the kneaded product is further formed into a lump by a forming equipment. Then the lump-shaped raw material is steam-boiled by iron pot boiling and baked and then cooled and cut into a prescribed shape with a slicer, etc. Successively, the raw material is dried and roasted with a roaster to provide the aimed KAKUNI (food material cut into square and boiled). |
