PURPOSE:To obtain a fermented seasoning being a raw material for transparent seasoning having elegant sweetness, sourness and fermentation odor, by subjecting a starch raw material to fermentation and aging treatment with a filamentous fungus. CONSTITUTION:(B) Filamentous fungus (the genus Rhizopus) is planted in (A) starch raw material (e.g. rice, barley, potato, starch syrup or glucose) and reared. Then (C) water and at least one kind of saccharide (e.g. glucose, sucrose, maltose, starch dextrin) is added thereto to provide the aimed fermented season ing. The seasoning is added to pickles, salted vegetables, sour alcohol drink, etc., to provide UMANI (taste) to these foods. |
