CONSTITUTION:A raw material for sausage production such as livestock meat or fish meat is salted, blended with seasoning, spice or condiment, etc., and meat-grinding, kneading, etc., are carried out to prepare a fresh sausage. Then the fresh sausage is packed into a casing such as sheep casing to form stick- shaped filler, which is then subjected to drying, smoking and boiling (steam- boiling) treatments or wound around a stick-shaped component without carrying out these treatments.
