PURPOSE:To prepare a food like broiled eel, having resemblance to broiled eel in appearance, taste and flavor, by mixing fibrillated rootcrops with a binder, an oleaginous seed, bean curd refuse, etc., forming the mixture, covering the surface with seaweed, frying in an oil and broiling the product. CONSTITUTION:For example, 7pts.wt. of crushed rootcrops (e.g. Japanese radish or carrot) is mixed with 45pts.wt. of drained bean curd or bean curd refuse, 10pts.wt. of a binder (e.g. yam) and 5pts.wt. of seeds (e.g. sesame or peanut) and the mixture is kneaded and formed. After covering the surface of the formed product with a sheet of seaweed, the product is fried in an oil and broiled to impart the broiled smell, hardness and brown color and obtain the objective food having the appearance, taste and flavor of broiled eel and low calorific value and useful as a health food without using eel or other fish meat or animal meat, etc. |
