PURPOSE:To obtain the titled beverage, rich in mineral or vitamin and having new flavor imparted thereto without peculiar grassy smell and off-flavor, by crushing and pressing a tomato to provide juice and subjecting the resultant processed tomato to lactic acid fermentation with specific lactic acid bacteria. CONSTITUTION:A tomato is initially crushed and pressed to provide juice. The resultant processed tomato is then sterilized and cooled. Precultivated Lactobacillus.bulgaricus or Lactobacillus.helveticus or both are subsequently added to carry out lactic acid fermentation. Microbial cells are then separated and the resultant fermented liquor, as necessary, is concentrated and/or adjusted to afford the aimed beverage. |
