PURPOSE:To obtain concentrated juice having rind and flesh uniformly dispersed in the juice and good appearance, by slicing fruits, blending with water and a glucide, further boiling, adding pectin, then heating and concentrating. CONSTITUTION:Fruits such as lemon, mandarin orange, pineapple, strawberry and/or apple are sliced into preferably 0.5-3mm thickness and blended with water and glucide. Then the blend is boiled and further incorporated with pectin. Then the blend is heat-treated and concentrated by a vacuum concentrator to give the aimed juice. An isomerized saccharide, honey, sugar and/or glucose is preferable as the glucide. |
