A process for the preparation of a fish product wherein raw ground fish is formed into slices, whereupon a plurality of raw slices (1, 3) are combined and formed into the desired shape. Preferably, the slices (1, 3) are treated with an aqueous solution or dispersion of an edible water-binding substance prior to combining or forming into the desired shape. |
