PURPOSE:To improve safety, water-holding capacity, and stability in a wide range of pH, preparing a surface active composition from one or more kinds of compounds selected out of sugar glycerol or acyl sugar glycerol represented by specific general formulas. CONSTITUTION:A surface active composition is prepared by the use of one or more kinds of compounds selected from sugar glycerol or acyl sugar glycerol represented by the general formula A-K (R1 and R2: a C 1-23 fatty acid residue, G: monosaccharide or its residue). Emulsified composition are prepared by emulsifying water phase components and/or oil phase components in the presence of said surface active composition. In this case, the emulsified composition can be prepared usually under the condition that said surface active component is in a range of 0.01-30wt.%, oil phase component 1-90wt.%, water phase component 5-95wt.%. |
