PURPOSE:To suppress the lowering of the activity of lipase and to obtain a stable lipase solution, by dissolving a lipase in a solution containing salts dissolved in water. CONSTITUTION:A lipase originated from animals, vegetables, microorganisms, etc., is dissolved in a solution containing salts which are soluble in water and inert to the inhibition of lipase activity. The variation of the three-dimensional active structure of lipase can be suppressed by this process. Excessively low pH (<=2) and excessively high pH (>=12) of the aqueous solution containing dissolved salts are not preferable. The salt concentration is generally higher the better. The solution can be compounded with other enzymes such as protease or amylase and further a surfactant, etc., and the addition of these additives is preferable. |
