<p>Method for producing a juice concentrate from grapes which are pressed to a juice is clarified and concentrated by evaporating. The grape which is obtained when pressing the grapes is concentrated in two steps, where the first step is carried through in direct connection to the harvest. The grape juice is then evaporated to a semi-concentrate which is mixed with alcohol and stored during a desired time. The semi-concentrate is evaporated in a second step to a desired water content while simultaneously stripping off the alcohol.</p> |
