摘要 |
PURPOSE:To obtain desalted red UME (Japanese apricot) juice having vivid red purple of perilla, rich in perilla taste and nearly completely retaining flavor and taste characteristic to UME, by subjecting the perilla to immersing treatment into the desalted UME juice. CONSTITUTION:Perilla being salt-free or pickled with salt for the purpose of removal of harshness and preservation and having as low salt concentration as possible is immersed to desalted UME juice desalted by an ion exchange membrane treatment at ordinary temperature for about 24hr and then solid content is filtered. |
