PURPOSE:To increase content of beta-carotene and eliminate offensive smell peculiar to a carrot (Daucus carota L.), by coloring a frozen food with a Dunaliella pigment consisting essentially of the beta-carotene. CONSTITUTION:A Dunaliella pigment, such as a dried substance obtained from a green alga (e.g. Dunaliella salina) of the genus Dunaliella and an extract prepared by extraction therefrom with a solvent, is added to production of a frozen food, such as ice cream or shaved ice. Thereby beta-carotene content is higher than that of a carrot pigment and the resultant food is effective in utilization as natural carotene. The color tone is better than that of synthetic beta-carotene with better flavor than that of the carrot pigment and synthetic beta-carotene without offensive smell. |
