PURPOSE:To produce fine powder in high yield without deteriorating original taste and flavor of a fresh raw material, by converting a fresh raw material into pasty state, etc., putting the paste into a container, freezing the content, heating with microwave and subjecting to drying and pulverization. CONSTITUTION:Live fishes (e.g. salmon, sardine or bream), mollusks (e.g. squid), seaweeds (e.g. Undaria pinnatifida) or crustaceans (e.g. crab or shrimp) are directly converted into pasty state and/or ground state, put into a container and frozen. The frozen material is dried in frozen state at a temperature within a specific range with a drying apparatus using microwave as a heat source and pulverized with a pulverizer (preferably to a particle size of 200-300 mesh) to obtain the objective fine powder useful as a raw material for KAMABOKO (boiled fish paste), SHAO-MAI (a purse-shaped dumpling stuffed with pork, etc.), GIAOZ (an elongated dumpling stuffed with pork, etc.), cake, bread, bean curd, rice cracker, etc. |
