The present process relates to the separation of psicose from at least one other ketose with the aid of an adsorption step which uses type Y zeolite adsorbent in which calcium cations are located at exchangeable cationic sites. After desorption, psicose is obtained as a very pure extract, with the other ketose being concentrated in the raffinate. In an advantageous embodiment, the psicose is separated using an aqueous feed mixture of monosaccharides which contains psicose together with other aldoses and ketoses. The feed is contacted with a calcium-Y type zeolite in two steps. Psicose and fructose are firstly adsorbed selectively from the extract, which contains other aldoses. In the second step, the psicose is adsorbed from the extract obtained in the first step and recovered at a significantly higher purity as compared with the feed mixture. The fructose is recovered from the raffinate in a very pure state, and essentially free of the psicose.
